Serves 2-3
What you’ll want:
– Pumpkin, chopped into small cubes
– Three Shallots, quartered
– 1 can of Lentils, drained & rinsed
– 1 punnet of Cherry tom’s, halved
– 1/2 packet of Rocket
– 1/four block of Feta

Dressing:
– 1 Tbsp. Further virgin olive oil
– 2 Tbsp. Pomegranate molasses or balsamic vinegar
– 2 tsp. Dijon mustard
– Juice of 1/2 a lemon

1. Coat pumpkin and shallots in some salt and different most well-liked seasonings (I used cinnamon & garlic powder) and a few oil and roast at 220 levels Celsius for 20 minutes
