Celebrating this pretty night and the top of my first 6 weeks at uni with a scrumptious dinner on the seaside ✨

In body • Uncooked 🥦 salad w/ @lisashummusnz Falafel

Salad recipe👇🏼(Serves 2-3)

🐚 What you’ll want:
– 2 small-medium Broccoli heads, chopped into small florets with minimal stalk
– 2 Celery stalks, finely sliced and diced
– 1 small Cucumber, diced
– 400g can Chickpeas, drained and rinsed
– 1/four cup Sultanas
– 1/four cup Cranberries
– 1/four cup Capers
– 1/four cup Sunflower seeds, toasted
– 1/four cup Hemp seeds
– Salt to style

🐚 Dressing: (mix following in a small bowl – I like mine to have a fairly thick consistency)
– 1/four cup Hulled tahini
– 1/four cup Plain yoghurt (or coconut yoghurt)
– Juice of half of a Lemon
– half of Tbsp. Apple cider vinegar
– half of tsp. Garlic powder
– 1/four tsp. Salt
– Water or milk to skinny (if wanted)

Mix all the above salad elements in a big bowl, add the dressing and season with salt & pepper 💚 I additionally advocate including pickled crimson onion you probably have any and serve w/ your favorite protein 🙂
