Chickpea tofu curry w/ quinoa πŸ›

Ingredients:
– 1x 400g can Chickpeas
– 300g Tofu
– 1 cup Coconut or almond milk
– 400g Cherry tomatoes
– 2 Garlic cloves
– 1 Onion, diced
– 1.5 tsp. Turmeric
– 1.5 tsp. Cumin
– 1.5 tsp. Ground Coriander
– 1/2 tsp. Chilli flakes
– 2 Tbsp. Peanut butter
– 1 cup Spinach, tightly packed
– 1 Tbsp. Coconut aminos
– Pinch of Salt, to taste
– Coriander, finely chopped
– 1 cup Quinoa, Cooked to packet instructions

1. Blend cherry tomatoes, spices, onion, garlic & peanut butter in a food processor until smooth
2. Add mixture to a large pan and allow to simmer for 5 minutes before adding milk, tofu & chickpeas
3. Turn up to medium heat and cook until liquid is reduced then reduce heat and add spinach, coconut aminos, salt to taste & coriander
4. Serve with quinoa or rice
