Kumara, Kale & Bulgur salad ✨

Ingredients:

• 1/2 cup Bulgur wheat @ceresorganics
• 3 cups Kale, shredded and massaged in extra virgin olive oil
• 3 medium Golden kumara, cubed
• 3 Radishes, thinly sliced
• 1 cucumber, diced
• 1/2 cup Edamame beans
• 1/3 cup Medjool dates, chopped
• 1/4 cup Hemp seeds @thebrothersgreen_
• bunch of Italian parsley, roughly chopped

Pre-heat oven to 220 degrees Celsius. Cube kumara and place on an oven tray. Drizzle with olive oil and toss with salt and ground coriander and roast for 20 minutes. Meanwhile, cook bulgur as per packet instructions in boiling veggie stock. Prep remaining ingredients and combine with kumara and bulgur when cooked. Season with salt & pepper 💚

I served this with a tahini dressing and then a boiled egg for protein. Smoked salmon, tofu or chicken would also be tasty options
