Veggie nachos 🌱

Another quick & delicious plant-powered dinner using simple, nutritious ingredients – what more could you want?!

What you’ll need (Serves 2)✨

Jackfruit mix:
• 1 Large carrot
• 2 Celery stalks
• 1 Capsicum
• 1 Tbsp. Oil
• 1 can Red kidney or Black beans
• @ceresorganics BBQ Jackfruit
• Handful Coriander, finely chopped

1/2 cup corn and 1/2 cup shredded kale would also be nice ingredients to add!

Salsa:
• 1 Avocado
• Juice of 1 lime
• 2 Medium tomatoes
• Handful Coriander, finely chopped
• Salt to taste

Heat the veggies with the oil in a large pan on medium/high heat for 5-7 minutes or until softened, stirring occasionally. Meanwhile, prep salsa by mashing avo and then combining remaining ingredients in a small bowl. Add jackfruit and beans to the veggies and heat for a further 5 minutes. Remove from heat and stir through coriander. Serve on corn chips (I used @mexicanonz salsa chips) and top with salsa
