Veggie nachos w/ a side of peppermint tea making for a relaxing camp dinner a few weeks ago 🏕

What you’ll need (Serves 2):
• 2 Carrots
• 1 Capsicum
• 2 Celery stalks
• 1x 400g can Black/red kidney beans/lentils
• 1x pack BBQ jackfruit

Heat veggies in a large pan on medium/high heat for 5-7 minutes until slightly softened. Add beans and jackfruit and heat for a few more minutes. Serve with corn chips and guacamole 🥑🤤

This bean mix is also perfect in tortillas or taco shells!
